Roasted and Raw Salad

Ingredients:

Romaine Lettuce, washed and chopped

Tomatoes, washed and chopped

Cucumbers, washed and sliced

Red Beets, washed, boiled, peeled and roasted

Golden Beets, washed, boiled, peeled and roasted

Sweet Potatoes, washed, peeled and roasted

Carrots , washed, peeled and shredded

Dressing:

1 1/4 cup of Vegetable oil

1/2 cup of Vinegar (white, apple, red, white wine...)

1 tablespoon of Dijon Mustard

1 teaspoon Salt

1/2 teaspoon Pepper
