Vegan potato salad (serves 6)

INGREDIENTS

  • pound potatoes about 4 medium-size
  • carrot
  • ½ red onion
  • 2celery sticks about 1 cup
  • cup vegan mayonnaise
  • ¼ cup mustard
  • tbsp olive oil
  • ½ tsp salt
  • ½ tsp ground pepper
  • ½ tsp paprika
  • ½ tsp garlic powder

INSTRUCTIONS

  1. Peel and chop potatoes into bite-size pieces. Cook potatoes in boiling water or a steamer until tender.
  2. Peel carrot and chop into small pieces. Cook in boiling water or a steamer until tender.
  3. Drain both potatoes and carrots and place in a big bowl.
  4. Chop red onion and celery sticks in small pieces and add them to the bowl.
  5. Add mayonnaise, mustard, olive oil, and seasonings. Stir with a wooden spoon.
  6. Let salad chill for an hour in the fridge.
  7. Enjoy!
